Orzo with Sautéed Garlicky Spinach and Tomatoes topped with Mozzarella and Toasted Pine Nuts
There are so many tasty ingredients in this simple side dish. I made the orzo as directed, sautéed some tomatoes, spinach, and garlic together until softened, added a bit of Fran's Vinaigrette, and tossed them all together with the cooked orzo.
