Paleo-Friendly Seafood Jambalaya
Jambalaya, a rich rice-based Cajun dish laced with spices and filled with sausage or other meat, is a New Orleans staple. Our version slashes the fat, with little impact on flavor, by using fish instead of sausage. Swapping cauliflower “rice” for traditional rice cuts calories and carbs even further, and adds a serving of antioxidant-rich cruciferous vegetables.
