I have a HUGE amount of veggies in the following pix, plus I used 4 lb. of chicken, so basically I quadrupled the recipe, giving me about 12 LARGE servings. I purposely didn't specify quantities of vegetables - that's totally up to you. Go heavy on your favorites and maybe less of others. The red pepper flakes, hot sauce or chili paste are standard in Thai restaurants. You can usually ask for your level of heat preference ranging from 0 or 1 (no/little heat) to 5 which is screaming hot!! As always, adapt every recipe to your and your guests' tastes....
