Lately, I've been cooking like my hair is on fire. I have a self-imposed deadline of March 31 to finish writing my first cookbook, even if it kills me. (If you don't hear from me in April, that's why.) In the midst of proofing recipes for the book, a friend was looking for ways to replace or
