***Cook’s Note: For my frosting, I omitted the powdered sugar and just used whipped coconut milk, coconut, and zest. Then, I used whipped coconut milk, 1 T. of honey, and some leftover zest to make a dairy-free glaze to serve with the finished cake roll.
