These Sweet Potato Muffins work great as mini or regular sized muffins, and we also made 2 small sweet potato loaves with this recipe (see picture above). For mini muffins, bake 10-12 minutes. Regular muffins will take 20-25 minutes, and the loaf pans were around 25 minutes as well. Enjoy!
