Even the biggest beet skeptics enjoy this soup because of all the other root vegetable flavors, caramelized notes and umami depths. If you're on the fence about beets, this is a good place to start. You if you don't like beets at all you could replace the ones in this recipe with equal parts carrots and parsnips.
