This recipe can easily be double, tripled and even quadrupled. And can be frozen for future meals. If you don't have kale, you can use spinach, collards, chard, baby kale, etc. And if you don't have great northern beans, but you can use navy, cannellini, chick pea, etc. To keep this recipe really simple I've used water. The longer it simmers the more flavor it builds. You can use broth in place of or a combination of water and broth, but be sure to adjust the salt levels and add slowly.
